  • 1 cup caster sugar
  • 1 cup self raising flour
  • 40ml milk
  • 2 eggs
  • 1 lemon finely grated rind handiest reserve juice for syrup
  • 125g butter melted
  • reserved lemon juice
  • 1 tablespoon caster sugar

  • ufeffpreheat oven to 190c or 170c fan forced
  • place all components except the ones for syrup into a bowl and mix with timber spoon till easy
  • grease a 6 hole texas muffin pan place 1 3 cup of combination into each hole bake for 20 minutes stand for five mins flip out onto a wire rack drizzle with syrup even as heat
  • syrup mix juice and sugar in a small saucepan and prepare dinner over medium heat for 5 minutes till slightly thickened
